    Dr. Amarat (Amy) Simonne

    Biography

    Amarat (Amy) Simonne is a Professor and Extension Food Safety Specialist in the Department of Family, Youth, and Community Sciences at the University of Florida’s College of Agricultural and Life Sciences. She holds a B.S. in Chemistry and Biology from Prince of Songkla University, Thailand, and earned both her M.S. and Ph.D. in Food Science and Technology from the University of Georgia. Since joining the FYCS Department in 2000, Dr. Simonne integrates her research (35%), and extension (60%) works to benefit students (5%) at graduate and undergraduate levels. Dr. Simonne is also an affiliated faculty with the UF Food Science and Human Nutrition Department.

    • Research and Extension

      Dr. Simonne’s integrated research and extension program explores food safety and quality issues, with three foci: 

      1. Systematically evaluating food constituents  (composition) that influence safety and quality using chemical, physical, and microbiological methods
      2. Examining relationships between food constituents, food safety, and quality, as well as understanding food handling behaviors among professionals and consumers
      3. Identifying barriers to healthier food choices and improved food safety practices, aiming to foster healthier individuals and communities.

      Her extension work serves both food professionals and consumers. She develops extension education programs covering safe food handling, produce safety, and worker health and hygiene training.
