Food, Nutrition, and Health

The goal of this Departmental emphasis is to address a broad spectrum of nutrition, health and food safety issues including:

  • Enabling people to make informed decisions that reduce the risk of major chronic diseases
  • Helping people to adopt dietary practices recommended for different life cycle stages
  • Encouraging people to take part in health screenings and services
  • Educating people about public policy issues that address food security and food safety concerns
  • Helping communities assess and address health needs and concerns
  • Promoting confidence in the food supply
  • Improving food handling practices to reduce the incidence of food borne illness; and
  • Enhancing food resource management skills for limited resource families with young children.

Extension Programs

Three state major Extension programs address these issues:

Research

Nutrition education research focuses on better understanding target audiences, particularly those at high risk of lifestyle-related diseases or problems. Research has also been conducted to determine the effectiveness of various educational approaches in promoting the adoption of recommended lifestyle changes. The Food Safety and Quality research program emphasizes methods to reduce toxicity of marine biotoxins; evaluation of phytonutrients in foods as affected by technologies; and assessment of consumer behaviors related to food safety.
